For this Mandagsskolen workshop we will travel around the world of coffee to discover how producers, processors and consumers may cooperate to build more sustainable supply chains.
Our guests will be Francesco Impallomeni, co-founder and roast master at Nordhavn Coffee Roasters, and Elena Allegri, of Green ERA, a University of Copenhagen consulting
group, which recently worked with Nordhavn Coffee Roasters to reduce the Company's GHG emissions and identifying cost-effective solutions.
According to different studies which calculated the carbon footprint of the coffee supply chain, the higher emissions are concentrated in the final steps of the chain, that is when the coffee arrives in the consuming countries. These findings suggest that our choices as coffee roasters, distributors baristas or consumers have a huge impact on the planet.
At the origin, agricultural practices affects the quality of your cups and which flavours are expected in the coffee. The very same farming practices seems to be the main asset for the growers to increase resiliency in times of soaring temperatures and collapsing coffee prices.
